Carrot Soup

 Some of the carrots which we planted last year were able to be harvested. From a bumper crop we made 4 litres of carrot soup. Even those of us who didn’t like soup helped to polish off the whole lot – Mrs Anderson barely got a taste!


I honestly have no idea what’s going on here!


The soup needed some enthusiastic potato peelers too.


The soup kitchen is in full flow – almost everything is ready for the pot and cooking is imminent.


Once in the pot it needed about 30 minutes to simmer before we could liquidise it in a food processor. The coriander went in with about 10 minutes to go.


The carrots also made a delicious carrot and spring onion stir fry. We harvested the spring onions too, and added a little maple syrup and hoi sin sauce.
